I love the lobster bisque, too. And freshness and a light touch with food makes everything delicious. I taught English as a second language in Mexico City for four months when I was in my 20s and still remember eating in a fish restaurant one night in Chapultepec Park. I no longer remember the name of my date nor the dish I ate, but I do remember thinking for years that it was the best fish I had ever eaten! I'm sure you have an amazing number of choices in the Yucatan.
In Puerto’s Morelos the fish early on were pop plentiful. Still fish now but not as much. In Isla Mujeres there was a shrimp processing plant but gone by late 1990s. No more conch for a long time.
I'm sorry to hear this, but not at all surprised. Ireland, too, has much less fish than it used to, and the kinds of fish that do arrive here have changed.
What a treasure it is to have such an incredible restaurant so close to where you live. It sounds so incredibly delicious and fun!
